
What does one do when you just don’t have time to cook? Make Time!
Everyone has the capacity to make time to cook.
You certainly make time to go out and pick up something to eat everyday, so why not take all that time and go grocery shopping and cook at home? Once again, the busy mom realizes that taking care of business includes taking care of herself. So all that time you spend waiting in the drive-thru or waiting in line adds up to time and money wasted. Just take 30 minutes out of a week and hit the grocery store with list in hand and shop. Shop as if your life depended on it because it does.
Tips for grocery shopping:
1. Have a snack before you go to the store. When you grocery shop hungry you are more likely to impulse buy unhealthy food items.
2. Grocery shop with a list or a recipe. An alphanista knows what she wants out of life! WHy would grocery shopping be any different. Go to the store with purpose and that will help with ease of shopping as well as staying within your budget.
3. Shop perimeter of the store. The perimeter of any grocery store has the essentials of eating. Fruits, vegetables, dairy products and meat are all on the outer edges of the store. Once you travel down any of the aisles, you can guarantee that your food item is no longer 100% natural.
Keep these few things in mind as you make your way through the grocery store. Here are some simple recipes to get you started.
Creamy Cheddar Grits
Ingredients:
2 cups water
2 cups half and half
1 cup fine or medium hominy grits
1/2 cup cheddar cheese shredded
1 Tbsp unsalted butter
salt and pepper tt
In a medium saucepan, bring the water and hald and half to a boil. Whisk in the grits and stir for about 1 min. Bring to a boil and then reduce to low heat and cook for another 10-15 mins until grits are creamy. Remove from heat and add cheese and butter and salt and pepper to taste.
Grilled Teriyaki Salmon
1 1/2 lb Salmon
1/2 cup teriyaki glaze sauce
2 fresh cloves of garlic
2 Tbsp Olive oil
Preheat grill. Check salmon carefully and remove any bones. Crush the cloves and garlic and spread onto fish. Then brush teriyaki glaze over the salmon. Place foil on grill and brush with olive oil to prevent sticking. Place salmon on grill and cook for 3-4 mins on each side or until fish is done.
This can be paired with creamy grits and a side of fresh sauteed spinach.
